It depends on how it is built. On a text PDF editing works well; on a scan there is no text to edit, only an image — there you write on top, or run OCR first. Documents with very complex layouts can react unpredictably to extensive edits.
The saved document records the modification date in its metadata. If you do not want that to appear, you can clean it with the Metadata tool.
No: to genuinely remove content you need Redact, which deletes it from the document. Covering it or typing over it with the editor can leave the original data in the file.
